The pans are flooded to a depth of only about 3-4 inches. The salt water is allowed to evaporate leaving the salt. After this has been done three times, the salt is scraped up layer by layer, whitest to brownest in color. The whitest is use for human beings, the next layer below for cattle, and the bottom more brownish is used in agriculture.
